- Butter– You can use either salted or unsalted butter, whatever you have on hand will work.
- Brown & ganulated sugar – The combination of sugars will yield a more chewy cookies with a lot more depth of flavor.
- Egg– The egg is the binding agent in these cookies.
- Vanilla extract– The vanilla extract adds depth of flavor.
- Almond extract- These cookies use almond extract to flavor the cookie dough.
- Flour– You can use AP flour for these cookies.
- Baking soda– This will give our cookies a little extra height.
- Salt– The salt will keep the sugar amount in these cookies more balance.
- Ruby chocolate chips – I used Sprouts ruby chocolate chips because they had a great deal, but if you want to go the extra step and make these even better you can use Callebaut ruby chocolate.

Ruby chocolate is not only visually different from the regular dark, milk, or white chocolate but it also is different in flavor.
The main flavor profiles are sweet, fruity, and a little sour almost like raspberry flavored. There is really no other chocolate we can compare this one to but it’s absolutely amazing!
How to make Crumbl Ruby Chocolate Chip Cookies at home

- Cream the butter, granulated sugar, and brown sugar together until smooth and creamy.
- Add in the egg and vanilla and mix to combine.
- Sift in the flour, baking soda, and salt and mix to combine.
- Fold in the chocolate chips, then scoop out equally sized cookie dough balls. Pull each cookie dough ball in half then press the two pieces together, jeeping the jagged-edged facing up (check photos) then place on a baking sheet.
- Using a large cookie cutter, something wider than your cookies, swoosh around your cookies to form the perfect round thick cookie.

If you asked me, I would immediately say that these cookies taste so much better the next day. The flavors would have had enough time to set and infuse everything.
To store your ruby chocolate chip cookies, place them in an airtight container and store them at room temperate for up to 4 days.
You can also store them in an airtight container in the fridge for up to 7 days. I prefer this method and usually pop them in the microwave for a few seconds to get them soft and chewy, ooey gooey again!
How can I make Crumbl catering sized cookies?
Instead of making 7 giant cookies, you can make 14 smaller catering size cookies by dividing your cookie dough into 14 little balls and baking them in the preheated oven for 10-11 minutes.

- Chill the cookie dough before baking- Chilling the cookies before baking will ensure that they don’t spread too much and retain that super soft and gooey center.
- Use the cookie cutter trick– Using the cookie cutter trick to make the perfect round cookies doesn’t do just that. It brings the cookie back together in case it spreads too much to keep it thick and chewy in the center.
- Let the cookie rest after baking to set fully– The cookies will seem underbaked right out of the oven and that’s why you need to let them cool down before digging in. I actually prefer these cookies after they sit overnight. The texture is just so good!

Crumbl Ruby Chocolate Chip Cookies
Ingredients
- ½ cup butter salted or unsalted, softened
- ⅓ cup brown sugar packed
- 2 tablespoon granulated sugar
- 1 egg
- 2 teaspoon vanilla extract
- ¼ teaspoon almond extract
- 1 & ½ cup all purpose flour
- ½ teaspoon baking soda
- ⅓ teaspoon salt
- ⅔ cup ruby chocolate chips Red notes for white chocolate option**
Instructions
- Preheat the oven to 325F and line a baking sheet with parchement paper then set aside.
- In a large mixing bowl or a stand mixer bowl, cream the butter, granulated sugar, and brown sugar together until light and creamy.
- Add in the eggs, vanilla, and almond extract and mix until combined.
- Sift in the flour, baking soda, and salt and mix just until the flour mixture disappears. Add in the chocolate chips and gently fold.
- Using a ¼ cup measuring cup or large cookie scooper, scoop out 7 evenly sized cookie dough balls. Working with one at a time, split each cookie dough ball in half and smooch back together keeping the jagged edge side up. Chill the cookie dough balls in the freezer for 15 minutes then bake in the preheated oven for 13-14. Don't worry if your cookies still look a little raw in the center.
- As soon as you pull out the cookies from the oven, using a larger cookie cutter swoosh around your cookies to form the perfect round thick cookie, top with a few extra chocolate chips, and let the cookie rest on the baking sheet for 20 minutes or until fully cooled down to set before enjoying them.

I made these but I was confused if the butter had to be cold or softened and there was a lot of sugar in here.
End result was my cookies being to crispy and thin. Also I had a lot of air bubbles..
