Sweet, gooey, and lightly smoky! This homemade Toasted Marshmallow Syrup is a game-changer for coffee and beyond! Use it to upgrade lattes, drizzle over pancakes, stir into hot chocolate, or shake into cocktails. Easy, fun, and full of campfire flavor in every sip.
Preheat oven to broil (high). Line a baking sheet with parchment paper or foil and spread the mini marshmallows in a single layer.
1 ½ cups mini marshmallows
Broil 1–2 minutes, watching very closely, until marshmallows are golden and toasty.
In a small saucepan, combine water and sugar. Bring to a gentle simmer over medium heat, stirring until sugar is fully dissolved.

Stir in the toasted marshmallows. They’ll puff and melt, keep stirring until mostly smooth.
Add vanilla extract and a tiny pinch of salt and stir.

Let the syrup simmer 2–3 minutes to thicken slightly.
For a smooth syrup, strain through a fine mesh sieve. Or leave it unstrained for extra toasted marshmallow gooeyness. Let cool to room temperature.
Store in a jar or bottle in the fridge for up to 1 week.

Storage: Keep in the fridge for up to 1 week. The syrup will thicken and gel when cold. That's the marshmallow gelatin doing its thing.
