Toasted Marshmallow Syrup for Coffee

Ingredients

  • ¾ cup water
  • ¾ cup granulated sugar
  • 1 ½ cups mini marshmallows
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Preheat oven to broil (high). Line a baking sheet with parchment paper or foil and spread the mini marshmallows in a single layer.

  • Broil 1–2 minutes, watching very closely, until marshmallows are golden and toasty.
  • In a small saucepan, combine water and sugar. Bring to a gentle simmer over medium heat, stirring until sugar is fully dissolved.

  • Stir in the toasted marshmallows. They’ll puff and melt, keep stirring until mostly smooth.
  • Add vanilla extract and a tiny pinch of salt and stir.

  • Let the syrup simmer 2–3 minutes to thicken slightly.
  • For a smooth syrup, strain through a fine mesh sieve. Or leave it unstrained for extra toasted marshmallow gooeyness. Let cool to room temperature.
  • Store in a jar or bottle in the fridge for up to 1 week.

Notes

To use: Add 1–3 tablespoons to coffee, lattes, or iced drinks for that toasted marshmallow flavor.
