Super Fluffy Sourdough Discard Pancakes

Ingredients

  • 1 & 2/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sourdough discard
  • 1 & 1/4 cup buttermilk
  • 2 tablespoon sugar
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  • Heat up a skillet on medium low heat while you mix the ingredients.
  • In a large bowl, whisk the sourdough discard, buttermilk, egg, melted butter, granulated sugar and vanilla extract.

  • Add in the flour, baking powder, baking soda, and salt and mix just until combined. It's okay if the batter has some lumps in it.

  • Grease the skillet that has been heating up with some butter. Pour 1/2 cup of batter for each pancake. Cook until bubbles form and edges are set, then flip and cook until golden brown. About 2-3 minutes per side.
  • Serve warm with your favorite toppings.
