Heat up a skillet on medium low heat while you mix the ingredients.
In a large bowl, whisk the sourdough discard, buttermilk, egg, melted butter, granulated sugar and vanilla extract.

Add in the flour, baking powder, baking soda, and salt and mix just until combined. It's okay if the batter has some lumps in it.
1 & 2/3 cup all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt
Grease the skillet that has been heating up with some butter. Pour 1/2 cup of batter for each pancake. Cook until bubbles form and edges are set, then flip and cook until golden brown. About 2-3 minutes per side.
Serve warm with your favorite toppings.
