Ingredients

  • 2 cans of low sodium diced tomatoes and their juice
  • 4-5 large crushed garlic cloves
  • ½ tablespoon basil
  • 1 tablespoon olive oil extra virgin
  • Juice of half an orange
  • 1 cup water
  • Salt and pepper to taste

Instructions

  • In a medium pot start by sauteing your crushed garlic cloves in olive oil over medium heat for a minute or two. This is just to infuse the oil with that delicious garlic flavor

  • Now add the tomatoes, the basil, the salt, the pepper, and the juice of half of an orange. Cover the pot and let it simmer for 25 minutes.

  • Get your hand blender and blend until you get a smooth marinara consistency.
  • Now you can either season to taste and enjoy or let it reduce a bit more depending on your likings. Me personally, I prefer it a little bit thicker so I simmered mine for an extra ten minutes after blending it.
