Cuisine: Italian
Servings: 1 cup
Calories:
- 2 cans of low sodium diced tomatoes and their juice
- 4-5 large crushed garlic cloves
- ½ tablespoon basil
- 1 tablespoon olive oil extra virgin
- Juice of half an orange
- 1 cup water
- Salt and pepper to taste
In a medium pot start by sauteing your crushed garlic cloves in olive oil over medium heat for a minute or two. This is just to infuse the oil with that delicious garlic flavor
Now add the tomatoes, the basil, the salt, the pepper, and the juice of half of an orange. Cover the pot and let it simmer for 25 minutes.
Get your hand blender and blend until you get a smooth marinara consistency.
Now you can either season to taste and enjoy or let it reduce a bit more depending on your likings. Me personally, I prefer it a little bit thicker so I simmered mine for an extra ten minutes after blending it.
