Ninja Creami Cottage Cheese Vanilla Ice Cream

Ingredients

  • 1 & ¾ cups cottage cheese full-fat or 2%
  • ½ cup milk
  • 2-3 tablespoon maple syrup monkfruit, honey, or agave (adjust to your sweetness preference)
  • 1 ½ teaspoon vanilla bean paste or sub with 2 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  • In your Ninja Creami Deluxe container, add cottage cheese, your sweetener, vanilla bean paste, and salt. (Make sure your mixture stays below the max fill line.)
    1 & ¾ cups cottage cheese, ½ cup milk, 2-3 tablespoon maple syrup, 1 ½ teaspoon vanilla bean paste, Pinch of salt
  • Use an immersion blender to blend until completely smooth and creamy. Scrape the sides as needed to ensure even texture.
  • Smooth the top with a spoon or spatula, secure the lid, and freeze flat for at least 24 hours.
  • Insert into your Ninja Creami Deluxe and select the Lite Ice Cream setting.
  • If the texture is crumbly, re-spin until it’s smooth and scoopable.
  • Fold in chocolate chips, chopped nuts, or cookie crumbles using the Mix-In cycle for a fun twist! You can also do this by using the mix-in feature in your Ninja Creami.

Notes

Tips:
• Vanilla bean paste gives a rich, gourmet flavor and those pretty little specks!
• Want it even creamier? Use full-fat cottage cheese or add a splash of heavy cream before blending.
• Turn it into cookies & cream by mixing in crushed sandwich cookies after the spin.
