Maple Glazed Oatmeal Cookies

Ingredients

For the Cookies:

  • 1 stick 8 tablespoons unsalted butter, softened
  • cup brown sugar packed
  • cup granulated sugar
  • 1 large egg
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon maple extract
  • 1 cups all-purpose flour
  • 1 tablespoon cornstarch
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 & ⅓ cups old-fashioned oats

For the Maple Glaze:

  • 1 cup powdered sugar
  • 1 tablespoons unsalted butter melted
  • 2 tablespoons pure maple syrup
  • 1-2 tablespoons milk as needed for consistency

Instructions

For the Cookies:

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper or a Silpat baking mat.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  • Beat in the egg, maple syrup, maple syrup extract, and vanilla extract until well combined.

  • In a separate bowl, whisk together the flour, baking soda, cinnamon, oats and salt.

  • Gradually add the dry ingredients to the butter mixture and mix until just combined. Stir in the oats.
  • Using a large cookie scooper ( ¼ cup) scoop the cookie dough and and place it on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Make the Glaze:

  • In a small bowl, whisk together the powdered sugar, melted butter, and maple syrup. Add milk, one tablespoon at a time, until you reach your desired consistency.

  • Drizzle the maple glaze over the cooled cookies or dip the top of each cookie into the glaze, allow it to drip a little before placing it back onto the pam. Let the glaze set before serving.
