Preheat your oven to 350°F. Line a baking sheet with parchment paper or a Silpat baking mat.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
1 stick, ⅓ cup brown sugar, ⅓ cup granulated sugar
Beat in the egg, maple syrup, maple syrup extract, and vanilla extract until well combined.
1 large egg, 1 tablespoon maple syrup, 1 teaspoon vanilla extract, ½ teaspoon maple extract
In a separate bowl, whisk together the flour, baking soda, cinnamon, oats and salt.
1 cups all-purpose flour, 1 tablespoon cornstarch, ½ teaspoon baking soda, 1 teaspoon ground cinnamon, ¼ teaspoon salt, 1 & ⅓ cups old-fashioned oats
Gradually add the dry ingredients to the butter mixture and mix until just combined. Stir in the oats.
Using a large cookie scooper ( ¼ cup) scoop the cookie dough and and place it on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
