Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the granulated sugar, brown sugar, cinnamon, salt, nutmeg, ginger, and allspice. Set aside.

In a separate large bowl, whisk the egg white until frothy.

Add water and vanilla extract to the frothy egg white, and whisk until well combined.
Add the walnuts to the egg white mixture, tossing to coat the nuts evenly.
3 cups walnut halves or pieces
Sprinkle the sugar and spice mixture over the walnuts, stirring until the nuts are well coated with the sugar mixture.
Spread the coated walnuts in a single layer on the prepared baking sheet.
Bake in the preheated oven for about 25-30 minutes, stirring once halfway through. Keep a close eye to prevent burning.
Remove the candied walnuts from the oven when they are golden brown and fragrant.
Allow the candied walnuts to cool completely on the baking sheet. They will become crisp as they cool.
Once cooled, break apart any clusters and store the candied walnuts in an airtight container.
