Grate the frozen butter into the flour mixture and toss to coat. Stir in the cheddar, parmesan, and green onions.
3 tbsp salted butter, 3/4 cup extra-sharp cheddar, 1/2 cup parmesan, 3 green onions
Add the blended cottage cheese mixture and stir until a shaggy dough forms. If it's too sticky to handle, add 1 to 2 tbsp more flour or chill for 10 minutes.
Turn the dough onto a well-floured surface. Press into a 3/4 inch thick rectangle and fold in thirds like a letter. Repeat once more. Depending on how your dough is responding, you could do this 1 or 2 more times until it holds together better!
Press the dough into a 3/4 inch thick rectangle again and cut into 8 biscuits. Arrange on the baking sheet about 2 inches apart. Chill for 10 minutes.
Brush the tops with egg wash and bake for 15 to 18 minutes, until golden brown and set in the center. Cool 10 minutes before serving.
1 large egg
