Preheat oven to 350°F. Line an 8x8 pan with parchment paper.
In a medium saucepan, melt the butter on the stove. Once melted stir in the granulated sugar, brown sugar, cocoa powder, and salt until the mixture is well blended and smooth.
½ cup unsalted butter, ¾ cup granulated sugar, ¼ cup brown sugar , ½ cup Dutch-process cocoa powder, ¼ tsp salt
Next, transfer everything to a large bowl and whisk in the vanilla extract. Add the eggs one at a time, beating until the batter becomes thick and shiny.
1 tsp vanilla extract, 2 large eggs
Fold in flour and cornstarch until just combined.
½ cup all-purpose flour, 1 tbsp cornstarch
Spread into the pan and bake for 20-22 minutes, or until the edges are set and the center has a slight jiggle. Let cool completely.
Once cool, flip the brownies and remove the parchment paper. To get an even flat surface, we will be adding the chocolate to the bottom layer of the brownies for a cleaner look.
Make Ganache
Heat cream in the microwave for 30 seonds. Pour over chopped chocolate and let sit 1 minute. Add a pinch of salt and stir until smooth. Spread ganache over the cooled brownie.
1/4 cup heavy cream, 4 oz semisweet chocolate, Pinch of salt
Add Rainbow Chips + Chill
Sprinkle candy chips on top while ganache is still soft.
2–3 tbsp rainbow candy-coated chocolate chips
Chill for 1–2 hours before slicing. Wipe knife between cuts for clean edges!
