In a small saucepan, combine the sugar and water. Bring to a simmer over medium heat, stirring until the sugar has completely dissolved. Remove from heat and let cool to room temperature.
1 & 1/3 cup granulated sugar, 1 cup water
In a blender or food processor, add the sliced strawberries, lemon juice, simple syrup (sugar water) and a pinch of salt. Blend until smooth.
2 pound fresh strawberries, 3 tablespoon lemon juice, pinch salt
Pour into a bowl and chill in the fridge or in an ice water bath for a few hours. We want the strawberry mixture to be really cold! (think 30F-40F)
Once the mixture is chilled, pour it into yourice cream maker. Churn according to the manufacturer’s instructions until the sorbet has a smooth, soft-serve consistency, usually about 20-25 minutes.
Transfer the sorbet to an airtight container and freeze for at least 2 hours, or until it reaches a scoopable consistency.
Scoop the refreshing strawberry sorbet into bowls or cones and enjoy! 🍓🍨
Notes
If you freeze for longer than 2 hours before serving, allow the sorbet to sit at room temperature for a little bit before scooping.
