Banana Cake with Cream Cheese Frosting

Ingredients

For the Banana Cake:

  • ½ cup unsalted butter softened
  • ¼ cup vegetable oil
  • 1 cup granulated sugar
  • ½ cup light brown sugar packed
  • 2 large eggs
  • ¾ cup sour cream
  • 1 teaspoon vanilla extract
  • 1 & ½ cup bananas mashed about 2-3 ripe bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 2 & ⅔ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoon milk or heavy cream as needed

Instructions

Make the banana cake

  • Preheat oven to 350°F and grease a 13x9 inch baking pan.
  • In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy. Add in the oil and mix again.

  • Beat in the eggs, then add in the mashed bananas, vanilla extract, and sour cream.

  • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour the batter into the prepared baking pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely in the pan on a wire rack.

Make the frosting

  • For the frosting, beat together the softened cream cheese and butter until smooth and creamy.
    8 oz cream cheese, ½ cup unsalted butter
  • Gradually add powdered sugar, beating well after each addition until fully incorporated.
    2 & ⅔ cups powdered sugar
  • Add vanilla extract and mix until combined. If the frosting is too thick, add milk or heavy cream, one tablespoon at a time, until you reach your desired consistency.
    1 teaspoon vanilla extract, 1-2 tablespoon milk or heavy cream
  • Spread the cream cheese frosting evenly over the cooled cake. Decorate with chopped up walnuts, slice, serve, and enjoy!
