Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, and vanilla extract until well combined.

Add in the flour, salt, baking powder, and freeze-dried strawberry powder to the wet ingredients, mixing until just combined.

Using a small cookie scooper (2 tablepsoon worth) scoop out 14 equally sized cookie dough balls, then roll each ball in additional granulated sugar. Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 9 minutes then remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
