In a large bowl, rub the sugar and the lemon zest together using your fingers to allow the citrus oils to come through in the sugar.
In a mixing bowl cream the eggs, sugar, and sour cream together until fluffy. Then, add in the oil and mix. Lastly, add in the lemon zest, lemon extract, and beat to combine.
In the same bowl, add the flour, baking powder, baking soda, poppy seeds, and salt and mix just until combined. Do not overmix.
Pour the batter into the loaf pan and bake.
Lastly, allow the pan to cool down completely before removing the loaf from the pan and then top it with the lemon glaze!
