Lemon Blackberry Cookies Recipe
These cookies soft, lemony and are covered with a melt in the mouth blackberry cream cheese frosting.
They will blow your mind!
Lemon juice and zest
Poppy seeds (optional)
Blackberry cream cheese buttercream
Cream the butter and sugars together until smooth then whisk in the egg, lemon juice, zest and extract.
Mix in the dry ingredients until the flour mixture disappears and a cookie dough forms.
Scoop out the cookie dough balls onto a baking tray and flatten. Bake for 11 minutes then let them cool for a bit.
Finally frost the cookies with the buttercream, top with a dollop of jam, and enjoy!
