Crumbl Pink Donut Cookies

These Crumbl pink donut cookies are easy and delicious buttery cookies topped with a homemade pink glaze and rainbow sprinkles.

Ingredients

sugar Cookie base

  • ½ cup butter softened
  • cup granulated sugar
  • 3 tablespoon brown sugar
  • 1 egg at room temperature
  • 2 teaspoon butter vanilla emulsion Use regular vanilla instead if you don't have this but I highly suggest you grab a bottle.
  • 1 & ½ cup all purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder

Pink glaze

  • 1 cup powdered sugar
  • 1-2 tablespoon milk start with 1 tbsp
  • pink food coloring add a little at a time until you get the desired color
  • rainbow sprinkles

Instructions

Make the sugar cookie base

  • Preheat the oven to 350F then line a baking sheet with parchement paper and set it aside.
  • Cream the butter, granulated sugar, and brown sugar together until smooth and creamy.
  • Whisk in the egg, the butter vanilla emulsion, butter flavoring (optional), and mix until combined.
  • Mix in the flour, baking powder, salt until the flour mixture disappears. Don't overmix your dough. Then using a large cookie scooper scoop out 6 equally sized cookie dough balls, place them on the prepared baking sheet, and gently flatten them to about ½ inch in thickness.
  • Bake the cookies in the oven for 10 minutes, then let them cool down on the baking sheet for 10-15 minutes before transferring to a cooling rack to cool down fully.
  • Once cool, using a small circle cookie cutter, cut a hole in the center to make them look like a donut. Keep the centers and dip them in the glaze as well to make donut hole cookies.

Make the pink glaze

  • In a small bowl, whisk the powdered sugar, milk, and pink gel food coloring together until the glaze is thin enough to glaze the cookie but not so thin that it will run off of the cookies as soon as you top them with it.
  • If the glaze is too thick add ¼ tablespoon milk at a time and stir again.
  • Dip the top of the cookies in the pink glaze, set on a baking sheet or a cooling rack, and sprinkle with rainbow sprinkles. Let them set for a little and enjoy!
