White chocolate raspberry overnight oats

Ingredients

  • ¼ cup old fashioned oats
  • 2 tablespoon chia seeds
  • cup greek yogurt or coconut yogurt to keep it vegan
  • ¼ cup milk use non dairy milk to keep it vegan
  • 2 teaspoon honey or maple syrup to keep it vegan, extra if you want it sweeter
  • ¼ cup raspberries washed
  • 1 tablespoon white chocolate chips or 1-2 large squares of white chocolate
  • ½ teaspoon coconut oil to thin out the chocolate

Instructions

  • Mix the oats, chia seeds, greek yogurt, milk, honey, and raspberries in a mason jar or a serving cup. If the mixture is too thin let it sit on the counter or in the fridge for 5-10 minutes until it sets just a little.
  • In a microwave-safe small bowl, melt the white chocolate and coconut oil together. Pour it over the slightly set overnight oats, and tilt the glass or mason jar around to make sure that the white chocolate is covering the top of your oatmeal fully.
  • Lid your mason jar, or cover your serving cup with plastic wrap and chill in the fridge for a few hours or overnight. Top with extra raspberries if you want, and enjoy your delicious breakfast/snack.

Notes

These overnight oat cups can be made up to 4-5 days in advance, making this the perfect meal prep breakfast option! 
Feel free to play around with the berry mix-ins in this recipe as well. These overnight oat cups taste so good with strawberries, blueberries, or even black berries!
