Crumbl cotton candy cookies

Ingredients

  • ½ cup butter softened
  • ¼ cup oil vegetable oil or canola oil
  • ½ cup granulated sugar
  • 2 tablespoon powdered sugar
  • 1 egg at room temperature
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla extract
  • 2 & ⅓ cup flour
  • 2 tablespoon corn starch
  • ¼ teaspoon salt
  • ¾ teaspoon baking powder

Cotton candy buttercream

Instructions

  • Preheat the oven to 350F then line a baking sheet with parchement paper and set aside.
  • Cream the butter, oil, sugar, and powdered sugar in a large mixing bowl or a stand mixer.
  • Add the egg, vanilla extract, and heavy to the sugar-butter mixture and mix until combined.
  • Add the flour, salt, cornstarch and baking powder and mix until combined, using a large cookie scooper, scoop out 8 equally sized cookie balls and place them on a parchement lined baking sheet.
  • Bake for 10-11 minutes then cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool fully.

Make the cotton candy buttercream

  • whip the butter, powdered sugar, heavy cream, and cotton candy flavoring until light and fluffy.
    Pink and blue buttercream
  • Separate the buttercream into two small bowls. Dye one with the pink gel food coloring, and dye the second one with blue gel food coloring. Transfer the colors to a large piping bag, making sure to put the blue color on one side and the pink color on the other. Don't worry about the frosting touching. Frost swirls around each cookie then decorate with the cotton candy pop rocks or nerds.

Notes

HOW TO STORE CRUMBL cotton candy COOKIES?

You can store these cookies in an airtight container at room temperature for up to 4 days, as long as it's not too hot where you are. 
You can also store the cookies in the fridge in an airtight container for up to 7 days. Make sure to let the cookies get back to room temperature before enjoying them to let the buttercream soften again.
