Servings: 20 cookies
First, start by preheating your oven to 350F, then line a baking sheet with parchment paper or silicone baking mat then set aside.
In a stand mixer, start by creaming the butter with the granulated sugar and the brown sugar using a paddle attachment until the mixture is light and creamy .Add in the egg white and the vanilla and mix again for 30 seconds or until fully incorporated.
Add in the flour, baking soda, baking powder, and salt and mix just until the flour disappears. Divide the cookie dough into three equally sized balls and place each one is a separate bowl. Dye one red, one green, and leave the third one as is.
Scoop out one teaspoon of cookie dough from each bowl, You now have two options, you can either put those three balls together and roll them gently to get a simple design or you can split each 1 teaspoon of cookie dough into two and randomly place them on each other before rolling them gently to create a more elaborate design. After rolling all the cookies, bake them at 350F for 7 minutes. Let the cookies cool on the cookie rack for 5 minute before transferring to a cooling rack.
Enjoy with a tall glass of milk or serve these cookie on a festive plate for Santa!
