Chewy brown sugar cookies

These brown butter brown sugar cookies are chewy and have a hint of caramel. They are chewy and melt in your mouth.

Ingredients

  • 1 stick butter divided
  • ¾ cup brown sugar packed
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 cup + 2 tablespoon flour
  • 1 tablespoon corn starch
  • ¼ teaspoon baking soda
  • teaspoon baking powder
  • ¼ teaspoon salt
  • cup granulated sugar to roll the cookies in

Instructions

Brown the butter

  • Fist start by melting 4 tablespoon ( or ½ a stick) of butter in a small sauce pan. Once it starts boiling gently stir the melter butter with a wooden spoon or gently swirl the pan to continuously stir it. After a couple of minutes the butter will change color, going from light yellow to deep golden yellow similar to honey color. There will be bubbles at the top so continue stirring the melted butter to see the color change.Once small brown bits begin to form and a nutty smell comes from the butter, you will know that it is ready. The butter can burn very quickly once it starts smelling nutty so don't walk away from it. Add in the rest of the butter to cool it down and stir until everything is melted and combined.
  • Transfer the melted browned butter to a heatproof bowl and bring your butter temperature down to room temp.

Now, make the brown sugar cookies

  • Now preheat the oven to 350F and line a large baking sheet with parchment paper then set aside.
  • In a stand mixer bowl, using a paddle attachement, cream the brown sugar and butter together for about 3 minutes or until it is light and fluffy. Add in the egg and vanilla and mix one more time until well incorporated. Add in the flour, corn starch, baking soda, baking powder, and salt and mix one last time. Just until the flour disappears!
  • Using a small cookie scooper, scoop out even cookie dough balls, roll them in the granulated sugar and place them on the prepared baking sheet. Bake for 9 minutes, then let the cookies cool on the baking sheet for 10 minutes before transferring them to a cooling wrack.
  • Enjoy these cookies right away or store them in an airtight container for later.
