Ingredients

Coffee blondie frosting

  • ½ cup unsalted butter
  • ½ cup light brown sugar packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 & ½ tablespoon instant espresso powder
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 2 tablespoon cornstarch
  • 1 & ¼ cup all-purpose flour

Instructions

Make the blondies

  • Preheat your oven to 350°F and line an 8x8 inch baking pan with parchment paper then set aside.
  • In a large bowl, mix the softened butter and brown sugar until well combined.
  • Add the egg, and vanilla extract, and mix until smooth.
  • Add the flour, salt, baking soda, cornstarch, and espresso powder, and stir until just combined. Do not over-mix. Spread the batter evenly into the prepared baking pan.
  • Bake for 18-20 minutes, or until the edges are set and the center is slightly firm. Allow the blondies to cool down fully before frosting.

Make the frosting

  • In a separate bowl beat the mascarpone cheese until light and creamy.
  •  Add in the powdered sugar, vanilla extract, and salt and mix to combine. Pour in the heavy cream and whip until you get stiff peaks. 
  • Top the cooled blondies while still in the baking pan, dust with cocoa powder, and enjoy! You can also chill the blondies once frosted to get that perfect slice every time. 

Notes

If you decide that you want to use instant coffee instead of instant espresso, the flavor wouldn't be as strong and the process of mixing it into the dough will be slightly different. 
If using instant coffee mix that with 2 teaspoons vanilla extract in a small bowl first before adding it into the cookie dough.
