Melted snowman peanut butter cookies

These delicious melted snowman peanut butter cookies have the best and softest peanut butter cookie base and a thick peanut butter cup on top! So good!!

Ingredients

Peanut butter cookie base

  • ½ cup smooth peanut butter
  • ½ cup butter softened
  • ½ cup brown sugar
  • cup granulated sugar
  • 1 egg at room temperature
  • ½ teaspoon vanilla extract
  • 1 & ⅓ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon corn starch
  • ¼ teaspoon salt

Decoration

  • 9 white chocolate peanut butter cups
  • cup white chocolate chips melted
  • 3 tablespoons black candy melts or semi-sweet chocolate chips melted
  • 1 tablespoon orange candy melts melted

Instructions

  • Preheat the oven to 350F then line a baking sheet with parchement paper and set aside.
  • Cream the butter, peanut butter, brown sugar, and granulated sugar. Add in the eggs and vanilla extract then mix until combined.

  • Add in the flour baking powder, baking soda, corn starch, and salt, and mix just until the flour mixture disappears.

  • Using a large cookie scooper, scoop out 9 equally sized cookie dough balls, place them on a baking sheet, and gently flatten to about ¾ inch in thickness. Bake in the preheated oven for 9 minutes.

Decorate the cookies.

  • When the 10-minute timer is up, take your white chocolate peanut butter cups out of the wrapper and place one upside down on top of each cookie. Gently press it down into the cookie.

  • Pour your white chocolate chips into a bowl and microwave it in 30-second increments while stirring in between until it's melted. Scoop and pour 1-2 tablespoons of melted chocolate on top of the cookie.

  • With oven mitts, carefully grab the sides of the baking sheet and gently tap it up and down on the counter. This will help the melted chocolate spread more evenly across the top creating that melted snowman look.
  • Finally, melt your colored candy melts in the microwave in 15-30-second increments. I like to do this in a piping bag or ziplock bag before I cut the tip-off. Massage the chocolate until fully melted then snip off the edge and create the eyes, smile, and buttons. Do the same with the orange candy melts and create the nose. Allow everything to set and enjoy!
