Ingredients

For the Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs about 12 graham crackers
  • ¼ cup granulated sugar
  • ½ cup butter melted, salted or unsalted
  • ¼ teaspoon salt

For the Cheesecake Filling:

  • 16 oz cream cheese 2 blocks, softened
  • ½ cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1 tablespoon all-purpose flour

For the Pecan Topping:

  • 1 cups pecans roughly chopped
  • ¼ cup light corn syrup
  • cup light brown sugar
  • cup heavy cream
  • ¼ teaspoon cinnamon
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  • Preheat your oven to 350°F then grease and line an 8x8-inch square baking pan with parchment paper, leaving some overhang on two sides for easy removal.

Graham cracker crust

  • In a large bowl, combine the graham cracker crumbs, granulated sugar, salt, and melted butter. Mix until all the crumbs are evenly coated.

  • Press the mixture evenly into the bottom of the prepared pan to create the graham cracker crust. Use the back of a spoon or a flat-bottomed glass to create a smooth and compact crust. Bake for 10 minutes then allow it to cool down.
