Ingredients

  • ½ cup butter softened, salted or unsalted
  • cup brown sugar
  • 1 egg at room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon coconut extract
  • 1 & ¼ cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup shredded coconut extra for topping
  • cup white chocolate chips mini if possible

Lime frosting

  • ½ cup butter at room temperature
  • ½ teaspoon lime extract
  • 1 & ½ cup powdered sugar
  • 1 tablespoon heavy cream or milk
  • 2 tablespoon lime juice
  • food coloring
  • 2 tablespoon white chocolate for drizzling, melted

Instructions

  • Preheat the oven to 350F then line an 8x8 baking pan with parchment paper and set aside.
  • Cream the butter and brown sugar together until creamy. Add in the egg, vanilla extract, and coconut extract, and mix to combine.
  • Fold in the flour, baking powder, salt, and shredded unsweetened coconut just until the flour mixture disappears. Fold in the chocolate chips, spread the batter onto the prepared baking sheet and bake for 15-16 minutes.
  • Pull the coconut bars out of the oven and let them cool down completely.

Make the lime frosting

  • In a large bowl, whip the softened butter, powdered sugar, milk, lime juice, and lime extract together until light and fluffy.
  • Add in a little lime green food coloring or mix some yellow food coloring and some green to create that perfect Starbucks coconut lime bar frosting color and stir.
  • Frost the cooled-down coconut bars, and drizzle with melted white chocolate, you can use a piping bag for this, a ziplock bag, or even a spoon if you don't mind thicker streaks. Sprinkle with more coconut, slice, and enjoy!
  • If you prefer these chilled, chill in the fridge until set and enjoy with a tall gladd of milk or your favorite Starbucks coffee!
