Ingredients

  • ½ cup butter
  • cup brown sugar
  • 2 tablespoon granulated sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1 & ¼ cup flour
  • 2 teaspoon corn starch
  • ½ cup black cocoa
  • 3 tablespoon oreo crumbs crushed up, about 2 regular stuffed Oreos crushed.
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • cup semi sweet chocolate chips

Strawberry cheesecake frosting

  • 4 oz Cream cheese
  • 4 tablespoon Butter
  • ¾ cup Powdered sugar
  • ¼ cup Strawberry jam thick/chunky, good quality (I used Bonne Maman)
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon strawberry flavoring Optional, for a more strawberry flavor

Instructions

  • Start by preheating the oven to 350F then line a baking sheet with parchment paper then set aisde.
  • Cream the butter, brown sugar, and granulated sugar together until creamy.
  • Mix in the egg, and vanilla extract until combined, then add in the flour, corn starch, baking soda, cocoa powder, crushed Oreos, and salt and mix just until combined. Add in the ⅔ cup of chocolate chip and gently fold.
  • Scoop out 9 equally sized cookie dough balls, place them on a baking sheet and gently flatten to about 1 inch in thickness.
  • Bake the cookies in the preheated oven for 10 minutes then let cool on the baking sheet for another 15 minutes then transfer to a cooling rack.

Strawberry cheesecake frosting

  • Cream the cream cheese and butter together with a whisk attachment until smooth. This will take about a minute.
  • Mix in the powdered sugar, half the strawberry jam, and the vanilla, strawberry extract if you decide to use that, and whip until fluffy. About 2-3 minutes on medium speed. Mix in the rest of the jam again to combine.
  • Frost each cooled-down cookie with the strawberry frosting and enjoy!
  • Optional- You can also add more strawberry jam on top of the frosting and swirl that in for more strawberry flavor.

Notes

Help, my frosting is too soft!

If your frosting is too soft, pop it in the fridge for 10-20 minutes then frost your cookies.

How to store these cookies?

Since these cookies are supposed to be served chilled, you can store them in an air-tight container in the fridge for up to 6 days. Pull them out of the fridge and enjoy them whenever you're craving a sweet treat.
