Beautiful Berry Chia Seed Parfait

This berry chia seed parfait is not just impressive and guilt-free, it’s pack full of nutrients from the chia seeds and berries!

Ingredients

  • 2 cups non-dairy milk
  • ½ cup chia seeds
  • 1 to 2 tablespoons maple syrup or any other sweetener
  • ¼ to ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ½ cup granola
  • 1 cup frozen berries puréed in blender or food processor
  • ½ cup strawberries sliced (keep a few whole to garnish the parfait)

Instructions

  • In a bowl, add the non-dairy milk, chia seeds, maple syrup, salt, and vanilla extract. Stir together until there aren’t any chia seeds floating on the surface. Cover the bowl and place it in the refrigerator overnight.
  • In 4 glass jars, or 2 if you’re having this as a meal, add a layer of granola, followed by a layer of berry purée and then a thin layer of chia seed pudding. Carefully stick the sliced strawberries on the sides of the bowl, and fill with more chia seed pudding until the strawberries are covered.
  • Repeat the layers, and top with a sprinkle of granola and a whole strawberry. Serve immediately.

Notes

The granola will soak up the moisture from the berry purée and chia seed pudding, so do not let it sit for too long.
