Healthy no bake cheesecake cups

These healthy no bake cheesecakes use Truvia sugar to satisfy your sweet tooth and are high in protein to keep you fuller longer.

Ingredients

  • ¼ cup graham crackers
  • 3 oz cream cheese at room temperature
  • 2 tablespoon truvia Add an extra tablespoon is it's not sweet enough for you.
  • ½ teaspoon lemon juice
  • ¼ teaspoon vanilla extract
  • a pinch of salt
  • ¾ cup greek yogurt

Instructions

  • First start by adding 2 tablespoons of crushed graham crackers at the bottom of each serving glass if you are making 2 servings. If you are making 4 smaller servings, fill each cup with 1 tablespoon of graham crackers at the bottom.
  • Now using a stand mixer or a hand mixer cream the cream cheese, truvia, pinch of salt, lemon juice and vanilla together.
  • Once everything is well incorporated add in the greek yogurt and mix for another minute or two to make sure that the greek yogurt is well mixer with the cream cheese mixture.
  • When the cheesecake mixture, spoon it evenly into the two serving glasses (if making 2 servings) divide the mixture between four cups if making 4 servings. Using the back of the spoon, flatten out the top. Place the cheesecake cups in the fridge for at least an hour to allow them to set.
  • Top your cheesecake with berry jam, sliced strawberries or anything your heart desires!

Notes

These no bake cheesecake cups can be stored in the fridge for up to 3 days. Make sure to not add any jam until you are ready to serve them. If you top them with the jam and store them it might seep into the cheesecake and you will love the beautiful definition.
