Hello everyone!

Today is day 6 of my Ramadan fast and so far so good. Except for the slight dehydration from the crazy Vegas heat. Oh.. and craving these deliciously healthy veggie quinoa sushi rolls!

I spent all day day dreaming about these, I prepared them but had to wait to eat them at sun down, so this was definitely harder for me to write! I like to think that I am fairly patient but this situation just proved me wrong.

Can you blame me though? These quinoa sushi are gluten free, packed with nutrients and will satisfy the whole family.

  • These sushi rolls are a great way to get in a lot of different veggies.
  • They are super healthy for you as opposed to the store bought kind that is made using white rice.
  • These quinoa sushi rolls can easily be turned vegan!
How to make quinoa sushi

How can I make vegan quinoa sushi?

To make this recipe fit your vegan dietary needs, use a vegan cream cheese instead of the regular cream cheese. There are so many options at grocery stores for plant based cheeses nowadays.

If you don’t care for cheese in your sushi rolls then feel free to omit this ingredient completely and have yourself the best vegan quinoa sushi roll of your life!

Ingredients to make quinoa sushi rolls

To make these veggie quinoa sushi rolls you will need:

  • Uncooked quinoa Make sure to wash your quinoa if it does not come washed.
  • Water– You will need water to cook the quinoa.
  • Seasoned rice vinegar– Seasoned rice vinegar is the perfect vinegar for sushi making. Seasoned rice vinegar is a vinegar that has sugar and salt added to it. It created the perfect balance of sweet salty and tangy.
  • Nori sheets Make sure to get sushi nori sheets and not the nori sheets that are made for snacking.
  • Toasted sesame seeds– Toasted sesame seeds adds a nice nutty touch to the quinoa sushi
  • Cucumber– Cucumbers give the sushi the perfect crunch.
  • Avocado– Avocados make the sushi a lot more creamy and add healthy fats.
  • Carrots– Carrots will add a pop of color to the sushi rolls.
  • Cream cheese– You can omit cream cheese if you are not a fan but I personally am obsessed with sushi rolls that have cream cheese in them.

Tools needed to make sushi

To make sushi you will need a bamboo mat that is covered with plastic wrap to keep it clean and make the whole process easier on you.

If you don’t have a bamboo mat, these nori sheets come with a free bamboo mat!

I have heard of people that roll sushi without a mat so if you’re one of those people, teach me your ways! I love learning to make the same thing is different ways!

What is Nori?

Nori means sea vegetable in Japanese. It is a red algae that runs dark green once it goes through the drying process. Nori has been part of the Japanese diet for more than two thousand years. It is used to make various dishes, one of them being sushi rolls!

Nori offers incredible health benefits as well, Some of those being:

  • It is a good source of vitamins and minerals.
  • It contains a variety of antioxidants to keep your body safe from cell damage.
  • It provides fiber that can help keep your gut healthy. By keeping your gut healthy, you will also maintain a healthy immune system.
  • Nori contains a huge amount of iodine to help keep your thyroid gland healthy.

How to make veggie sushi?


First, start by cooking the quinoa. Place the rinsed quinoa and the water in a medium saucepan over high heat. Bring to a boil, then cover the pot with a lid and reduce to simmer. The quinoa will be ready in 20 minutes.

After letting the quinoa summer for 20 minutes, remove the saucepan from the heat and add in the seasoned rice vinegar. Gently stir the quinoa, place the lid back on the saucepan and let the quinoa cool down and absorb the rice vinegar.

How to make quinoa sushi

While the quinoa is cooling down, prepare the fillings and line them up on your work surface to make building the quinoa sushi easier.

To build the quinoa sushi rolls, start by wrapping the bamboo mat with a piece of plastic wrap. This will keep it clean and make your work a lot easier.

Now lay the bamboo mat flat on your work surface and lay one nori sheet on top.

Scoop out 1/3-1/2 cup quinoa on the nori sheet. Using the back of a wooden spoon spread the cooled quinoa evenly on the nori sheet, making sure to leave to leave about 1 cm border at the edge.

Place a few pieces of cucumber on top of the quinoa ( on the side that’s closest to you)

Add the carrots, the avocados, the cream cheese and the sesame seeds.

Now lift the end of the mat that’s closest to you and gently roll it over the ingredients, pressing as you go to keep your rolls tights. Once the quinoa sushi roll is mostly rolled and you can only see the 1 cm edge piece. spread a little water on it and seal the sushi roll and set aside. This will make sure it is closed tightly. Do this with the remaining rolls.

Slice each roll into 8 pieces with a wet and sharp knife. Serve with soy sauce and wasabi!
