These valentine’s day stamped shortbread cookies are something I look forward to every year around this time! They are perfectly buttery melt in your mouth cookies. Stamp your favorite message on those and gift them to your loved ones this valentine’s day season! This is the perfect cookie to bake with the kids too.
Since valentine’s day is right around the corner I thought why not share some delicious stamped shortbread with you guys! I know many of us might be tried to eat ehalthier around this time and that’s why this cookie recipe does not make a huge batch and is also not too sweet!
If you know me, you know that I am totally obsessed with cookies and desserts in general that are not overly sweet. So I make my own since most of the goodies that you can get from outside have no balance of sweetness!

A couple of day ago I went to target… You know just to have a lovely little walk around target because I’m obsessed with that store!
I don’t know if it’s the lights, or the color red, or the starbucks smell… Or all of these combined but I can spend hours in there without getting bored and go back the next day to hang out there some more! Anyone elese does this, or am I the only weirdo here?!
But anyways, I went to target and had to check out their valentine’s day little section. I automatically fell in love with their cookie stamps. They were pink and red and made out of plastic so they were super cheap (1$ each!! Got get yours friends)
I got both of them, because well… ya girl is so indecisive… I figured, I’ll find something to do with them eventually!
So right as I went home I started thinking of what cookie to make with them, it had to be some sort of a stamp-able cookie, so I went with shortbread! And that’s why we are here now 🙂

Like I said before, these cookies are not overly sweet which makes them the best little shortbread cookie to accompany your afternoon tea or coffee!
These cookies are also very easy to make and only require a few ingredients… You know just like any shortbread does! Because they are so simple even the non cookie lovers will actually enjoy these 😉 Try them out!
What’s in these valentine’s day stamped shortbread cookies?
This recipe is just like any other shortbread recipe! It contains a few basic ingredients and yileds the perfect buttery shortbread cookies. Here is what you will need for this recipe:
- Butter– This is where the shortbread gets its delicious buttery flavor. Make sure to use good quality butter to get the best cookies!
- Granulated sugar– Usually people use powdered sugar for shortbread but we want these cookies to have a nice and crispy bite so granulated sugar it is.
- brown sugar– Brown sugar usually gives a molasses flavor to cookies and keeps them soft, so a little amount of brown sugar was used in this recipe to give a hint of that.
- salt– Every baked treat or dessert needs to have some salt in it to make the flavors pop even more.
- Egg yolk– This is the binding agent. I have made this recipe before using a very small egg and it worked well too.
- Vanilla– Make sure to use good quality vanilla. These cookies don’t have that many ingredients so the vanilla helps flavor them and give them that unique shortbread flavor.
- Flour– One of the main ingredients for most cookies! All purpose flour is fine for this recipe.
- Corn starch– The corn starch gives this recipe that extra crispiness we all love in shortbread!
Can I use salted butter?
I didn’t use salted butter in these cookies, but you can absolutely use salted butter for this stamped shortbread recipe. Just make sure not to add any more salt to the recipe!

How to make Valentine’s day stamped cookies
First, prepare a lining sheet by lining it with parchment paper or silicone mat.
Then beat together the butter, sugars, and salt until creamy. Add in the egg yolk from a large egg, and vanilla and beat for another minutes.
Add in the flour and the corn starch and fold using a spatula to avoid over mixing.
When the dough comes together, divide it into 18 equal golf sized balls and place them on the baking sheet.
Slightly flatten the balls and stamp with the flour dusted stamp to about 1 cm thick. At this point you can leave the cookies as they are or get a circle cookie cuter and cut the outside or the cookie to get more of a clean finish.

Chill the cookies int he freezer for 30 minutes. About 20 minutes in, start preheating the oven to 400F.
After the stamped cookies have been chilling for 30 minutes. Pull them out and place them in the oven for 11 minutes. The cookies will be lightly golden around the edges when they’re done.

Here are some tips and tricks to help you make the perfect batch of stamped shortbread cookies ever time!
- Make sure to keep the stamp lightly floured! This step is crucial in making sure that the stamp does not stick to the cookie when you are trying to remove it.
- Don’t skip freezing time! By freezing the stamped cookies before baking them, you will ensure that the cookies retain their shape and won’t spread out.
- If you want thinner cookies- Make sure to adjust the cooking temp. Start with 8 minutes and then start checking your cookies continuously. You will know they are done when the bottom edges turn lightly golden.

- 1/4 cup granulated sugar
- 1tbsp tbsp brown sugar
- 1/2 tsp salt
- 1 egg yolk or 1 very small egg
- 1 tsp vanilla
- 1 1/4 cup flour
- 1/4 cup +1 tbsp corn starch
- First line a baking sheet with parchment paper or silpat.
- Start by beating together the butter, both sugars, and salt until light and creamy. Add in the egg yolk ( or small egg) and vanilla and beat for another minute or so.
- Add in the flour and corn starch and fold using a spatula.
- When the dough forms, divide it into 18 equal golf sized balls and place them on the prepared baking sheet. I used a small cookie scoop to do this. Slightly flatten the balls and stamp with the a flour dusted stamp until it is about 1cm thick. At this point you can leave the cookies as they are or get a circle cookie cuter and cut the outside or the cookie to get more of a clean finish.
- Place the baking sheet in the freezer for 30 minutes. About 20 minutes in, start preheating the oven to 400F.
- After the stamped cookies have been chilling for 30 minutes. Pull them out and place them in the oven for 11 minutes, making sure to rotate the baking sheet halfway through. ( Make sure that your baking sheet is cold before baking, it will help keep the cookies from spreading) The cookies will be lightly golden around the edges and that's how you'll know they are done.
- Remove the cookies from the oven and let them cool on the baking sheet.
You could technically use any stamps you’d like to use. These vanilla shortbread cookies will turn out amazing regardless.
