Happy new year πŸ™‚ I cannot believe that it is already 2020… Where has the time gone! I say this because it went so so fast but also because I didn’t get the chance to post these chocolate dipped chocolate cookies before Christmas which is an absolute shame on my part.

But seriously, if you have any leftover candy cane this is the best peppermint candy cookie recipe… trust me on that!

What makes these chocolate slice and bake cookies so special?

I am extremely obsessed with slice and bake cookies because well as per the title, you slice and you bake! It is the most simple thing ever, and if you’re like me you L O V E easy recipes especially around the holidays or for Christmas. Since I was so inspired by my other walnut chocolate slice and bake cookie recipe, I decided to create a recipe for peppermint cookies as well because I know how much people love those around Christmas time.

I didn’t have any peppermint extract so I opted for candy cane chocolate cookies instead of adding the flavoring to the cookie itself. I’m saying this just to let you know that most of these ingredients you will have in your pantry! So go ahead and treat everyone to some of the best cookies ever!

Why do these cookies taste so good you ask? I usually don’t discriminate but these cookies are the absolute best. They are taken a step further because they have actual peppermint candy on top. It adds a perfect little crunch and pepperminty flavor for those of us who can’t get enough!

Ingredients for these chocolate candy cane cookies

This chocolate candy cane cookie recipe does make a pretty large batch, hence why they are the perfect holiday/ Christmas cookie recipe. You will be able to use it in at least 6 cookie boxes if you’re planning of giving those as a gift! Here is what you will need to make the best holiday cookies ever:

  • Flour
  • Cocoa powder
  • Baking powder
  • Baking soda
  • Salt
  • Butter
  • Brown sugar
  • Eggs
  • Vanilla extract
  • Bright white candy melts
  • Coconut oil
  • Candy canes

How to make Chocolate peppermint crunch slice and bake cookies?

This cookie recipe has multiple different steps. You will first make the cookie dough then continue on with the rest.

Start by mixing the dry ingredients an set aside.

In a separate large bowl or stand mixer bowl, cream the butter and sugar together then add in the eggs and vanilla and mix some more until well combined and smooth.

Add in the the dry mixture and mix on low speed until the dough in completely combined.

Split the dough in to 2 12″ inch long logs, cover with plastic wrap and let them rest in the fridge for at least an hour or up to 24 hours.

When you are ready to bake the cookies, preheat the oven to 350 degrees F

Pull out the cookie logs from the fridge and slice cookies about 1/2 inch thick

Place the cookies on the prepared baking sheet about 1-2 inches apart because they will get a little bigger and we don’t want them to touch.

Let the cookies cool for 10 minutes on the baking sheet before transferring them to a cooling rack.

While the cookies are cooling, crush your candy canes completely.

When the chocolate slice and bake cookies are completely cool, melt the candy melts according to the package and dip the chocolate cookie into the candy melt.

Sprinkle the peppemrint candy over the cookie right after dipping it in the candy melt since it dries quickly.

Work with one cookie at a time!

While the cookies are cooling cruch your candy canes completely. Place the candy canes in a ziplock bag and smash them using a rolling pin. When the cookies are completely cool, melt the candy melts according to the package making sure to add 2-3 tbsp of coconut oil to make it easier to work with. Dip each cookie halfway into the white candy melts, place the cookie back on the parchment paper lined baking sheet and sprinkle with the candy cane bits right away. The candy melt solidifies quickly so dip and sprinkle each cookies before moving to the next.

Ingredients
  

  • 2 cups flour
  • 3/4 cup cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 2 large eggs room temperature
  • 1 tsp vanilla
  • 12 oz packet of bright white candy melts
  • 2 tbsp coconut oil
  • 3 candy canes crushed up

Instructions
 

  • In a large bowl mix the flour, cocoa powder, baking powder, baking soda, and salt together and set aside.
  • In a large bowl or a stand mixer, cream the butter and sugar together on high speed. About 2 minutes with a kitchen aid or 5 minutes by hand.
  • Add in the eggs and vanilla and beat on high until combined and smooth.
  • Add all the flour/cocoa powder mixture at once and mix on low speed until the dough is completely combined.
  • Split the dough in half and roll into 2-12" inch long logs.
  • Cover each log in plastic wrap and chill in the fridge for at least 1 hours or overnight.
  • When you are ready to bake the cookies, preheat the oven to 350F degrees. Line a large baking sheet with silpat or parchment paper and set aside.
  • Pull our the cookie logs from the fridge and slice cookies about 1/20inch thick.
  • Place the cookies on the prepared baking sheet about 1-2 inches apart because they will get a little bigger and we don't want them to touch.
  • Bake for 8-10 minutes, let the cookies cook on the baking sheet for 10 minutes before transferring them to a cooling rack to cool completely.

I know it isn’t Christmas time anymore, but trust me saving your candy canes for next year is a horrible idea. They will turn into a sticky mess real quick… Even more so if you live somewhere humid.

Tips to make the best slice and bake chocolate peppermint cookie recipe!

As always, there are a couple of tips I will give your to make the best cookies ever!

  • Cut cookies of the same size- If the cookies are all cut into different sizes they won’t bake evenly. So try your hardest to have them all be the same size.
  • Don’t over bake! I’m pretty much repeating myself at this point, but never over bake your cookies. They will continue baking as they cool down, just trust the process and the recipe πŸ˜‰
  • Dip and sprinkle- When dipping the cookies in the candy melt, sprinkle them with the crushed up peppermint candy canes right away. The candy melts hardens quickly, so if you wait too long the candy won’t stick.

Substitutions for this slice and bake chocolate cookie with candy cane bits

Here are a couple of substitutions you can use when it comes to this recipe:

  • White chocolate- If you don’t want to use candy melts you can always use white chocolate. Make sure that you are using THE best white chocolate though since it will affect the taste greatly. I’ve made these using white chocolate before and they make the best white chocolate cookie recipe if you ask me πŸ™‚
  • Any peppermint candy- peppermint candies are readily available during the holidays but if you are making these any other time of the year you might not find candy canes. In this case you can go with mint candies or whatever has a similar flavor!
