For today’s quote, I wanted to bring a little reminder to everyone to stop being so hard on themselves. So often we tend to be our toughest critics and that isn’t the most healthy. Life is supposed to be trials and errors and when you fail, you take the time needed to get up and try again.

I once read something in a self-help book that said that we should treat ourselves with the compassion and love we would treat a little infant with. If they mess up, you won’t get horribly mad at them and yell and cause a scene, you would help them out and motivate them to try again. Well, this is my point, this is how we should treat ourselves because we are only human.

This week I am bringing you something that you can make for your boo this valentine’s day, a beautiful vegan chocolate mousse recipe!! I know it is still a little early but hey it is never too early for some chocolate, and obviously, this is could be made anytime as a healthy little treat!

As I was growing up I remember always making chocolate mousse with my mother. It was one of the most enjoyable desserts for me!! I mean come on who doesn’t love chocolate, and better yet who doesn’t love creamy chocolate. The only thing is that we used to make a chocolate mousse using eggs. But this time, I decided to do something different and try and go with vegan chocolate mousse.

I was extremely skeptical because most of the chocolate mousse recipes I saw using silken tofu seemed to have odd textures from the pictures they were using. But I decided to give it a shot anyway, and oh my goodness! It was to die for!

For the ingredients of this recipe, I would suggest you go with organic silken tofu since soy is so mass produced it is easy to ingest a lot of pesticides if your tofu is not organic and that’s an absolute no no… I also said get extra-firm SILKEN tofu instead of regular because it will give you a better final result as far as texture goes. I also went with the raw honey as opposed to regular sugar because that is a lot healthier for you!

Note:

Make sure to use the best quality dark chocolate you could get because that’s what will give this quick vegan chocolate mousse its flavor.

This could also be used as a chocolate mousse pie filling… Just thinking about that now is making my mouth water!

Chocolate mousse quick recipe

Yield  5-6 little pots / little Mason jars

Prep Time  10 minutes

Total Time  40 minutes

Ingredients

150 grams of good quality dark chocolate or about 1 cup of good chocolate chips

1 extra firm silken tofu (149 grams)

2 tbsp honey or any other sweetener of choice (substitute the honey for maple syrup for a vegan option)

A pinch of sea salt

Toppings

Chocolate Shavings

Berries

Crispy chocolate balls

Sea salt

Directions

  1.  First start by melting the chocolate in the microwave in 30-second intervals, stirring between each time in order to not burn the chocolate. Keep going until the chocolate is melted, and set aside to cool at room temperature.

  2. In your food processor, blend the extra firm silken tofu and the honey until very smooth, then add a pinch salt and the melted chocolate and blend well until everything is combined

  3. Scoop your ramekins into your mini mason jars, and refrigerate for 30 minutes.

  4. Garnish with your favorite toppings and enjoy!

The leftovers can stay in the fridge for up to a week!
