Hello again friends! this post was a little rushed but I had to make sure to post this recipe before thanksgiving so you guys can impress everyone this year with this amazingly easy sweet potato pie!

Moving on to my pie…I’m doing things! Can you see how cool these photos came out?! I am honestly so proud of how they look. I often see other food bloggers’ posts and their images look amazing, they honestly look almost fake but yet so appetizing…
But yea… this whole rant to just express how excited I am that now my pictures are looking a little bit better!
The thing is that this week is Thanksgiving week! and of course when Thanksgiving is here you absolutely have to do some sort of Friendsgiving as well. So last Saturday that was exactly what I ended up doing, I met up with a couple of my college friends and had a feast!
I obviously was the one that was the disgnated dessert maker. and since my sweet potato pie turned out so well, that I wanted to share it with you. This is the first holiday season that I tried making a sweet potato pie and I know for sure that I will continue this as a thanksgiving tradition becasue it is so tasty!
The fastest fancy sweet potato pie ever
Yield 1 tartPrep Time 10 minutesTotal Time 1 hour – 1 hour and 15 minutesIngredients1 pre-baked pie shell; you can find the recipe here1 15-oz. Can of Bruce’s Yams 1 14-oz. can sweetened condensed milk
3 large eggs, beaten1 tbsp. vanilla extract1 tsp. cinnamon1 tsp. ground nutmeg1/2 tsp. ground ginger1/4 tsp. fine sea saltDirections
First, set your oven to 325 degrees.
Then, start by blending your sweet potatoes in a food processor or a blender, make sure to discard the syrup that the yams are soaked in.
Add in the eggs, vanilla, spices, salt, and the sweetened condensed milk and blend until smooth
Now, pour the sweet potato mixture in your pre-baked crust and bake in the oven until the filling is slightly jiggly in the middle but set on the outside. This will take anywhere from 50 to 65 minutes.
Cool the pie in the turned off oven for about an hour with the door slightly propped open to avoid the pie from cracking. Then cool it completely on a wire rack.
Top with some homemade whipped cream and enjoy!
